Chef Marvin Robinson

Chef Marvin Robinson was named ‘Chef of the Year’ at the recent Taste of Jamaica competition for his Papaya Glazed Jerk Beef Shoulder topped with a rice cracker and scotch bonnet avocado salsa. Chef Donald Brooks’ Rosemary Infused Jerk Pork Loin served with a pumpkin and yam ragu and annatto sauce earned him the title of ‘Junior Chef of the Year.’ The annual “Taste of Jamaica” competition, held at the Montego Bay Convention Center October 15 – 16, is organized by the Culinary Federation of Jamaica (CFJ) as a means of motivating young Jamaican chefs while showcasing their talents locally and internationally. One hundred chefs competed in this year’s competition, taking their culinary creations far beyond the standard curry, plantains and jerk spices.  Two addition chefs from the property, Chef Andre Fowles and Chef Leah Jones also competed, winning a Silver award and recognition for “Best Use of Chicken,” respectively.

Dining is an important part of the Round Hill experience. Our award-winning executive Chef Martin Maginley and his team incorporate the finest local ingredients to create a variety of dishes inspired by the bountiful market basket of Jamaica and the cultural influences that have evolved the palate of the region. Borrowing from the rich and diverse history of Jamaica and the Caribbean, under Maginley's direction Round Hill's chefs seek to combine both technique and style, weaving them into dishes that reflect contemporary Caribbean cuisine while preserving the integrity of age-old recipes and cooking methods. We are proud to use fresh vegetables and herbs from our very own Round Hill Organic Garden. We are committed to using locally grown, sustainable produce whenever possible.

Anyone who has been to Round Hill, or Jamaica for that matter, knows the importance of rum - not only to the tourism industry, but also to the economy of Jamaica. 

On any given day you’ll find Stewart, Larry or Peter pouring away favored drinks including authentic Jamaican Appleton Rum.  Following are some of our most popular rum drinks that are served at The Beach Bar, The Pool Bar and in The Cocktail Bar.  Or even on the beach! 

The Round Hill Special (consume two of these and you’ll know why they’re so special!)
Tall Jamaican – Appleton special rum, triple sec, lime and pineapple juices
Jamaican Delight – Appleton special rum, apricot brandy, lime and pineapple juices
Yellow Bird – Appleton special, Galliano, crème banana, line and orange juices
