Mango Cheesecake Recipe

4 oz  White Sugar

3lbs  Cream Cheese

16 oz  Heavy Cream

2 oz  Corn Starch

10  Eggs

1 oz  Vanilla

16oz  Mango Puree

Chocolate Cake Recipe

1.25  lbs Flour

1.25  lbs White Sugar

.75  lbs Shortening

.25  lb Cocoa Powder

.5  oz Baking Powder

.25  oz Baking Soda

7  Whole Eggs

7  Egg Whites

16 oz Milk at room temperature

Chocolate Cake Method (prepare first)

  • Combine all dry ingredients together with shortening and mix until crumbly
  • Add whole eggs and mix
  • Add egg whites to batter and mix
  • Add milk to batter and mix
  • Pour into greased cake pans and bake at 350°F
  • Makes two 10″ cakes

Cheesecake Method

Combine cream cheese, corn starch and sugar in a mixer; process until combined. Add eggs and vanilla, process using on/off turns until combined. Pour mixture in prepared pan based with a thin layer of chocolate cake, swirl in mango puree.

Bake for 1 hour or until set at 350°F. Let cheesecake cool for 1 hour. After cheesecake is at room temperature place in freezer. Spread mango glaze over chilled cheesecake before serving.
